Vanilla Crisps

Simple to make yummy cookie you don't have to roll out!

Equipment

  • hand or stand mixer
  • measuring cups and spoons
  • middle size mixing bowl
  • 1 or 2 cookie sheets
  • cooling rack
  • scraper
  • spatula I like the small cookie sized ones the best!
  • parchment paper or silcone baking sheet optional

Ingredients
  

  • 1 cup butter option: margarine; use half shortening
  • 1 cup granulated sugar
  • 2 teaspoon vanilla
  • 2 1/2 cup white flour

Instructions
 

  • Adaptations: I only use butter (no shortening) for most cookie recipes. The option for these cookies is 1/2 cup margerine or butter and 1/2 cup shortening as shown in the recipe photo.
  • Preheat over to 375 degrees
  • In middle size bowl.mix well butter, suga, salt and vanilla until smooth
  • Add 2 eggs and blend in
  • Stir in flour a little at a time, strring before adding more. Scrape the bowl sides often
  • Roll about 1/2 teaspoon of dough into even size balls or drop on ungreased baking sheet in rows. Gently flatten
  • Gently flatten for even baking.
  • Decorate as desired
  • Bake at 375 degrees preheated oven for 8-10 minutes
  • Cool on cooling rack
