Cranberry Chicken Salad

Ingredients
  

  • 2 large skinned chicken breasts Or one large can white chicken. drained
  • 2 finely chopped celery ribs
  • 1/4 cup cranraisins can substitute raisins
  • 1 /2 cup mayo
  • 1/4 tsp cracked black pepper
  • 1/2 tsp lemon juice.
  • Almond slivers or chopped pecans

Method
 

  1. Gently boil 2 chicken breasts.
  2. Drain and cool and chop cooked chicken into bite sized pieces.
  3. Finely chop 2 celery ribs
  4. Put all ingredients into mixing bowl.
  5. Mix thoroughly.
  6. Top with almonds or pecans for serving
  7. Makes 3-4 cups
