Jet Lag Cookies

cookies minus the chocolate chips

Ingredients
  

  • 1/4 c shortening
  • 1/4 c butter
  • 1 1/4 c all purpose flour
  • 1/2 c packed brown sugar
  • 1/4 c sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon baking soda
  • Optional: 1 c semi sweet chocolate pieces

Method
 

  1. Preheat over to 375 degrees
  2. In a mixing bowl beat the shortening and butter with an electric mixer for 30 seconds or by hand until blended
  3. Add egg and vanilla. Mix until blended
  4. Add about half of both sugars, mix until blended
  5. Add half of the flour and baking soda, mix until blended
  6. Add remaining dry ingredients beating until throughly combined
  7. Optional: Add chip and beat in by hand or on slow speed for about 10 -15 seconds
  8. Drop rounded teaspoon of dough on the baking sheet 2 inches apart on to ungreased cookie sheet
  9. (Using parchment paper helps with clean up)
  10. Bake 8 -10 minutes or until edges are lightly browned
  11. Cool on a wired rack or on paper towel
  12. Makes 30 small or 24 medium cookies
