These can be busy days with little time to prepare the evening meal. At least that is true in my house.
This is super easy and a fast meal to make. Fresh vegetables, chicken breast with fresh cream and select cheeses pair with linguine. Warm up the hearty bread and there you go…a meal for all ages to enjoy.

It looked really good. So off to the grocery I went for a few items and the fresh pasta Courtney’s recipe called for. Fresh pasta for a family of 5 is expensive! I used 1 pot and 2 skillets not just one. One skillet for the chicken, another for the sauce and a pot for the pasta. It’s still an easy clean up.
Here is my version of this light tasting alfredo!

Fresh Cream Alfredo
Ingredients
- 1 large Chicken Breast cut into small pieces
- 1 clove Garlic
- 1 pint cherry tomatoes
- 2 cups fresh spinach
- 3 cups whipping cream
- 6 oz cream cheese cut into small pieces
- 1/2 cup fresh parmesan cheese
- olive oil
Instructions
- Cook linguine or fettuccine according to package directions.
- Cut 1 large chicken breast into small pieces.
- Toss with fresh garlic or garlic powder.
- Sauté in heated skillet with olive oil until lightly browned and fully cooked.
- If you are using the same skillet, wash before doing the next steps.
- Lightly coat the bottom of a large skillet with olive oil. Heat.
- Sauté cherry tomatoes until ready to burst.
- Remove to a bowl.
- Turn the heat to med high.
- Pour the fresh cream in the hot skillet.
- Add the cut up cream cheese.
- Whisk until melted and blended together.
- Toss in the chicken, stir.
- Add the tomatoes and gently stir.
- Add the spinach, gently stir.
- Add Parmesan cheese, gently stir.
- Remove from heat.
- Put pasta in a soup plate and top with the alfredo sauce. Serve warm.

This was a special looking meal with a big taste, light not heavy. The bright red cheery tomatoes and fresh spinach for a festive touch. Doesn’t it look pretty in these Christmas soup plates? This took me about 30 minutes from start to table. Want to teach your kids a “fancy” dish that is easy to master? This is a good one. No chopping or measuring seasonings. A meal to wow guests. Just add a green salad that is pre-dressed; perfect special holiday meal.

Never used cream cheese. Usually just butter. Maybe I’ll try it next time.
