Mad Dash Broccoli Cheese Soup Mix is a friendly helper in the kitchen on busy chilly days.
Okay, it’s not as cute as my toddler helper who made me smile as I was preparing this easy to make favorite, Broccoli Cheese soup for our Friday lunch. Our grandsons were here for the weekend.
Honestly, making lunch is not my favorite meal to prepare! But, when we have little visitors who like to eat regularly, I have to fix lunch.
It was a cooler rainy day. Perfect weather for preparing a warming soup. These cool days will soon turn to cold and we will enjoy soups regularly. Having Mad Dash soup mixes on hand takes away the often tedious involved work to make soup.
Right up my alley! I like easy especially when it comes to making lunch. The girls’ also packed it for their lunch at work. We have an all adult household usually these days. It isn’t often we sit around the table with our varying schedules so having a grab and heat in the fridge is great!
I had recieved some packets at the Haven Bloggers Conference. There are dip mixes and even some for quick desserts!
How to make it? Add water, half and half (I used milk and heavy cream) with the soup mix packet. Bring to a boil and simmer. Add the cheese until melted. How easy it that?
Careful with the dairy products! Cheese and milk and cream will scorch if not watched and stirred over LOW heat.
The mix recipe calls for Velveeta which melts into a creamy soup.
I added about 3 tablespoons of cream cheese to add extra creaminess. You could also use cheddar as an alternative cheese. Left over broccoli? Toss it in!
This soup mix soup can stand alone too without additions. I tried it before I used the leftover few tablespoons of cream cheese and adding leftover broccoli from supper. It was good!
Mad Dash Broccoli Cheese Soup
Equipment
- knife
- heavy bottomed soup pot
- measuring cup
- whisk
Materials
- 3 cups water
- 2 cups half and half can use heavy dream or milk or a mixture of the 2
- 1/2 pound Velvetta cut into chunks
Instructions
- Combine soup mix with water and half and half in heavy bottom pot
- Stir to mix and bring to a boil
- Reduce heat to low and simmer for 30 minutes
- Add chopped up cheese to soup base
- Stir until melted over LOW heat watching to prevent scorching. Milk and cheese will scorch quickly!
- Serve warm
How easy was that? Super easy and delicious!
