FOUR FAMILY FAVORITE RECIPES FOR SUMMER

Let’s try again with corrections!

I’m sharing four favorite recipes for the summer season that our family enjoys. Two are made with fresh produce from local farmers and our own garden.

Do you live in an area where you can pick your own strawberries? It’s a fun activity especially for kids.

So is spotting a local farm stand to pull over to pick up a pint or 2. My grandson is showing off a pint of strawberries he picked at a local farmer’s. We all had a good time picking strawberries. There were 5 grandkids, mom and aunt plus me, Grandma.

Four recipes I chose for you

Readers, how can I possibly share only four of the family favorite recipes?

I chose these because they are on repeat for our family! The recipe links for your ease to use are below. There’s no special trick to making them. Just follow the recipe!

One quirk is to the Rosemary Pretzel Salad. Don’t shortcut the time for allowing the jello to fully set! When I plan out the timing for preparing a meal, I plan to prepare it first thing or even better, the night before.

Rosemary Strawberry Pretzel Salad

The Rosemary Strawberry Pretzel Salad has been called a retro dish. Have you seen it popping up recently on SM and blog posts? I’ve been serving it for years! It is a multi-seasonal dish.

Like many of our favorite dishes, we call them by a family member or friend’s name that is associated with the recipe.

Rosemary of My Home and Travels, my cousin was who I called on when I couldn’t find my copy of the recipe. I have no idea when I first made this. It’s just one of those dishes that has always been around… for ages. So that’s why we call it Rosemary Strawberry Pretzel Salad.

It also doubles as a dessert. Sometimes, my family eats it with the main meal and for dessert too!

Though you can certainly use fresh or frozen strawberries. when it is strawberry season, you know I will use fresh!

Grandpa’s Hash Brown Casserole

This one is called Grandpa’s Hash Brown Casserole. It was on the menu when we visited my folk’s home especially if he was grilling steaks! A wonderful change from a baked potato!

It’s delicious with ham and well, just about any meal. Breakfast? For sure! This summer, I’ll make it for us.

You may know this by other names like funeral potatoes. Personally, I don’t care for that name. Way too sad.

I can vouch for its versatility and standing up to travel for pot lucks and meal deliveries. If there are any leftovers, and I do mean if, this hash brown casserole is still so good reheated in the microwave.

Meg loves this shrimp dish! It’s pasta dish with tomatoes plus fresh vegetables and shrimp. Why do I include Meg’s Shrimp Primavera for a summer dish?

Do you have a garden? We do. Using the sweet peppers and tomatoes from our garden is what makes this a delicious summer main dish. It’s a dsh for special gatherings. I serve it with salad and crusty bread.

One last dish! A special dessert, Oreo Cheesecake. Not only is it delicious, it is a pretty dessert .

This Oreo cheesecake is a cold dessert! Ice cream is always enjoyed all seasons. Really, how often do you make cheesecake? None was left over! It was a one on a kind extra special dessert for us!

There is some thing energetic that happens with special summer meals. These favorite dishes we reserved for summer gatherings.
